Mountain Duckling Ragu with Egg, Spinach and Capsicum Fettuccini
Start with a 2 kg+ Duckling.
A day before, portion it down to four, trimming flappy bits of skin/fat (reserve) and dry skin on a rack in the fridge.
On the day……….. Skin and de-fat frame. Combine all the skin and fat, to simmer down to use later for the best Duck fat potatoes you will ever eat….
Chop up frame and add to a pot along with 1x Celery stick chopped, 1x Carrot chopped, 1x Onion chopped, 2x Star Anise, 1 fresh sprig of each, Rosemary, Sage, Tarragon and Thyme.
Cover with water and simmer one hour, skimming skum from time to time.
Skin 1kg of top quality (I used local market garden) Tomatoes then de-seed and dice. Place in a colander over a bowl and add the juice of ½ lemon and 1 tbls sugar (this will intensify the flavour). Reserve liquid.
Over a Charcoal fire, heat a pan and add 30grs Butter and 30ml top grade Evoo. Caremelise 1x chopped Onion, 4x chopped Garlic.
Add then, 2x Bay leaves, 2x sprigs Thyme, 2x sprigs Rosemary, a handful of Flat leaf Parsley and Basil.
Top with Tomatoes and 5x chopped Ancovey fillets. Season with fresh ground Pepper only.
Simmer uncovered 1 ½ hours adding Duck stock and Tomato liquid to keep moist.
When almost done, oil and Season Duck pieces and sear both sides over Charcoal.
Watch out for flare ups...............
Clear an area in the Sauce, and place pieces in, topping with Sauce.
Continue to cook 30 mins or until tender.
Serve on a bed of Fettuccini Pasta
Big effort but the results are well worth it.

Shayne you are a master cook. That just knocked me over I still have two ducks in the freezer from that coles deal and this recipe is on the cards. It sounds lighter and fresher than traditional baked or smoked duck. Im thinking you possibly developed this from your love of rabbit ? In That Making the duck lean and then adding vegetable fats and flavours.

That's not the story here.
When they first came on, many of the stores I visited had nil stock.... so I was given rain checks that last for 12 months.
That said, I have a pile of them that resemble a deck of cards ,,, and, I doubt we can eat that much duck before November

Being a big chain like Coles, you think that all stores would have standard issued rain checks......

Trouble with duck at Coles around here is that if they are not on the special they don't have any Looks great Shayne, big effort indeed, I think I need to find out when a mate of mine out in the middle of nowhere (actually it's sort of beyond nowhere) is going duck hunting again then get some shells loaded I didn't have a very good run with the Coles duck, but that was my fault, however wild duck... oh man Cheers

Well, I was going to make this, woke up this morning as sick as a dog, The duck has been in for a near week so I shot it out I know it was something I ate and poultry is the last thing on my mind today

All good mate and thanks for the offer, I've still three in the freezer. Right now I'm gathering the ingredients for your pork scewer with jungle salt. Need more stuff and have the day off tomoz so an early trip to the Asian grocer is in order so that I can get at least 8 hours marinade time.
