Going to Brisbane tomorrow morning... won't be staying the night, but I will get a chance to indulge in some Asian BBQ pork in Chinatown. Thursday and Friday off, so I may come up with something. Was thinking grilled fish and/or Cajun Blackened chicken

Picked up some bbq time today for the weekend, Pleasant weather forecast and I'm getting hyped Im thinking something Korean for the Assado but not quite sure about the collar butt yet. Definatly pulled Though. Maybe a salt Honey finish with a mild short smoke for a golden bark then foiled most of the way.

I've got a kg of baby octopus marinating in the fridge for tonight, to team up with a crusty loaf of bread and a greek salad.

Leg of Lamb in the kettle this afternoon, with at least an hour rest before tea. Nothing fancy just spiked with Rosemary, Garlic, and Lemon Thyme. We usually have roasted vege's Greek style but SWMBO is being slack tonight so it will be just plain baked stuff with a few steamed ones as well.

Ahhh, Smokey's pic of pork collar got me to wanting to do this one again smittenkitchen.com/blog/2011/11/homesick-texan-carnitas/And I've got a craving for Clam Chowder but I'm stuck in a MUST CLEAN OUT THE FREEZER mode. I've got some unidentifiable yellow stuff in a vacuum bag hmmm maybe left over benedict sauce - thinking about it now - actually I wonder if it'll be safe to re-heat, and some containers with pea and ham soup (I think - that one I wont know until it gets thawed) plus all sorts of different meat. At least I labelled the meat, but why do I not label the other stuff ..... I really need to get my act together at times & stop being so lazy. Well I used up some stuff last night - did a Tom Ka Gai from chicken, pork stock, lemon grass, galangal & chilli - all of them frozen. Recipe from hot-thai-kitchen.com/Pai gave out some good tips on freezing galangal & chilli & I found in the chinese grocery shop frozen lemon grass by the dozen at a real good price. The pork stock came from a recipe from that site as well. Now I've got to dig through the freezer & see what I can come up with tonight. Cheers

Pork/Veal mince and a few other bits and pieces then given a bit of a rub Plan was to weberise them late this arvo but I walked up the road to get the paper and the one I stopped off for at the pub turned into several too many and well............ they went into the oven Came out fine. Man!!! That looks good !! It's a public holiday in WA and for whatever reason, probably a busy weekend I slept in big time so by the time I got up what was going to be my wife making scrambled eggs for breakfast had turned into her making enough of them to feed four for lunch but only two to eat them Thus the chicken that I was going to make a pie of is in the fridge for tomorrow and we'll be having a nibble plate tonight. Not really bothered, pies are something you have to be in the mood to cook, and I wasn't Cheers

Well worth a go and like a Totaly deboned bird, It's a Wierd feeling just Bighting into where there should be bones. Good job there Dave, I could not see any blowouts at all even considering YA been down the pub Hoddo, I took the boys to the chipper on Sunday for lunch to satisfy what Gatsby put into my head Now you've gone done it again

I'm going to have to give stuffed wings a go. Those look great and I'm sure I've seen some elsewhere. Going for a look around and check out some Thai books. Pretty sure there's a Thai version somewhere.
