I have made this a heap of times for inclusion in a seafood platter or as finger food for those parties where you just graze for a few hours rather than sit down for a feed. I use Disaster Bay Chiili company Chilli wine Jelly in these but a decent sweet chilli sauce will do.
Ingredients; 400g green prawns, peeled & deveined 2 Cloves Garlic, diced finely 2 cm Ginger, diced finely ½ bunch Coriander leaves, picked and chopped finely 1 Tablespoon Lemongrass, finely diced 1 teaspoon Fish Sauce 1 Egg 1 Tablespoon Plain Flour 2 Tablespoons Disaster Bay Chilli Wine Jelly Salt & pepper
Directions 1. Mince Prawns in blender or food processor 2. Add Ginger, Garlic, lemongrass, Coriander and Fish Sauce and mix well 3. Add Egg and stir through 4. Season to Taste 5. Check consistency and add flour as required to stiffen up mixture 6. Make into small patties, using 1 teaspoon of mixture at a time 7. Refrigerate for about an hour then pan fry or BBQ on hot plate until golden 8. Add Sweet Chilli Sauce staright over the top and stir gently until sauce caramelises and adheres to patties. 9. Serve hot and eat.

If you add some minced pork to this you also have a filling for wontons. The good wife and I spend a few hours making heaps of them to be frozen for quick mid week meals. We just fill up a Tupperware container with baking paper between each level so they don't freeze together.

Ah yes Smokey, the advantages of a good freezer. We do the same, big batch of Spring Rolls, Spanakopita (cheese and spinach triangles), spaghetti sauce in serving size lumps. We also make a heap of Moussaka when the eggplants are in season, and big batches of Lasagne, all frozen in meal sized portions.
