I cooked this for the family and it was oh so good. More...ish to ne end.
Gunna do it again,,, as a regular, as it gets the thumbs up from the children as well.
Roasted Penne with tomato and two salami's
Bassically, fry 200gr of different Salamis in a pan over a hot Charcoal fire, remove, drain oil.
Sauté 1 diced brown onions until soft.
Then add 4 cloves chopped Garlic, 3 sprigs Thyme, 2 bay leaves and 2 grated carrots.
Sauté 5 mins
Add 1kg of chopped tomato, cover and simmer down (about 10 mins)
Add the Salami, stir, cover and cook for another 5 mins
Add under cooked Penne along with chopped Basil.
Roast for 10 mins (top should start getting crispy)
Then, add comb Mozz and Parm cheese.
Its done when she's all nice and crispy.
This is sooooooo yum,,, a must cook

I have done this a few times since and we all love it here.
