My wife had one of those significant birthdays with a zero on the end a couple of weeks back that was celebrated at a favorite restaurant where she tried and loved a new dish on the menu so figured I'd have a go at replicating it for her. Had a look around and this seemed to be pretty much the recipe: www.dinner-mom.com/phyllo-wrapped-salmon-withpesto/Turned out to be remarkably easy, the local Farmer Jack always has good salmon steaks, Coles now sell chilled, not frozen phylo that is really good, thank goodness, making that stuff is a chore, and I make a batch of pesto pretty often, so just an assembly job really except I hate cooking sprays, used a brush and melted butter To accompany I did a cheesy potato bake, crinkle sliced potato in two layers with grated cheese and finely diced onion, a lot of fresh ground black pepper and extra butter plus some steamed broccoli. It seemed to meet with empty plate approval Incidentally there seems to be an endless debate over how this pastry is spelt, in my learning days it was "Filo" but this spelling seems to be the current preference Cheers

My wife would love this too, She loves the pesto thing. Im more of a creamy asparagus type.

G'day It's winter .. It's QLD We have only time "so much to enjoy " the creamy style" I'd like to hear more. Regards dave PS yes philo doesn't "sing" unless it is made with melted butter. Most probably"soft butter"these days but what the heck!!

Heh, I hadn't used the pastry for a while, reminded me of how many great dishes you can do with it so with most of a pack left.. Cheers
