The following recipe comes from the streets of my home town, Athens. There's a couple of shops around the main market that serve these fish sandwiches that are to die for. In Greece they use farmed sea bass that is quite cheap, grilled on the spot in charcoal grills but you can use any kind of fish, cheap or expensive. At home I have tried them with Cod, snapper, Barramundi, leftover red emperor, whiting.
Ingredients
1 Fish fillet Pita pockets or chiabata bread Sliced tomato Sliced Onion Sliced zucchini Chopped parsley EVOO A squeeze of lemon juice mild mustard S&P Pepper flakes/sliced chilies (optional).
Method
Season the fish and grill it. Lightly grill the Zucchini. Mix the EVOO, lemon juice, mustard, S&P to make a thick dressing. Heat the pita pocket or lightly toast the Chiabatta bread. Build your sandwich, adding the fish fillet, tomato slices, onion slices, grilled zucchini, parsley and dress the SW with the EVOO and lemon dressing.

I remember those, used to stay at the King George but never ate there, better food outside Cheers

I was living in the suburbs, but once/twice a week I always drove to the center of Athens and did my shopping from the central market. It was a pilgrimage of sorts, always accompanied by street food, or ouzo/raki and meze at one of the little places near the market.
