This has to be the biggest offset smoker I've seen up close. Located just down the road cooking chickens, Buffalow wings and ribs for the Billambil CPO/ General store. Selling chooks, Buffalow wings, Pork ribs and sausage. Only open on Sunday's for lunch but I caught my new mate Sean playing around with it on the way home from my sons league game. The cooking chamber is over 4 metres long, Custom made up in Queensland some time ago. He burns Iron bark as the base and Macadamia for spice. A flavour profile Im very familiar with. The trailor is at maximum allowable width and the fire box to chamber has an adjustable baffle. The fire box air intake are twin screw augars.

Next Sunday, Tomozz it looks like I'm cooking your Carnitas . The wife has to fly to Sydney tomorrow at the last minute as her mum just got diagnosed with Breast cancer. One whole collar butt will be too much for just three so I will halve it and do pulled pork another day.

Well that's not great news - hope it all goes well - your mother in law that is. Not the news anyone ever wants to hear. You should enjoy the Carnitas - I loved it - just remember the advise do not stir the pork.

As for the BBQ, theres 14 chooks on that behemoth and it looks empty!!!

It's been one of those days. Alex, (my wife) did not take the day so well having lost her dad to the big C so bbq took a back seat. It's all came out this afternoon, I drive her to the air port 6 am.
Sorry to bomb the thread as it literally unfolded today, Emotions are skattered in the house ATM
I gave the pit master our forum details so might see him join. Regardless I'll be doing a snoop dog write up after a taste test visit. It's a business for him and in the 45 minute chin wag I had, Half a doz locals rocked up putting in their orders for the next day. I've No Idea what the fourteen chooks wre for? locals I suspect. That was only the first chamber too. This pit must have been seen before. maybe those that are members of other forums that are into pits can get its history ID'd ?
