Bought a couple of skin on chicken breasts and decided to follow Smokey's peri peri recipe. Threw all the sauce/marinade ingredients in the food processor then marinaded the chicken for a few hours. To BBQ the chicken I followed the captain's advice. Used a trivet on the baby Q but without the foil so the chicken did not touch the grill. Cooked it skin down then lowered the heat and cooked it skin up till cooked through. Meanwhile I cooked the marinade, adding a bit of sugar and some chilli sauce to up the heat. Served with brown rice and steamed veg.
