Lahmacun is a popular middle eastern dish of spiced lamb mince on flat bread dough, much like a cheese-less pizza. I used the last of the lamb in my freezer, and some thin pitta bread from a middle eastern store and cooked in in the oven on a pizza stone because i was lazy Goes without saying you can do it on the BBQ. Traditionally it is cooked in a wood-fired oven. Minced lamb Minced onion Finely diced green peppers Finally diced tomatoes Parsley Tomato paste Olive oil S&P Cumin Chili flakes You mix all the ingredients and knead them till they get a smooth consistency. Allow the mix to stand for an hour or so for the flavors to integrate, then spread the mince meat paste thin on your pittas or dough. Place the Lahmacuns in the oven/BBQ ideally on a pizza stone and cook till thhe dough is crispy and the meat cooked. Serve with tomato slices, sliced onion and parsley and drizzle a few drops of onion Lahmacuns can be either sliced like a pizza and served as an entree or folded like a wrap

In Beirut they'd probably be calling it Manaquish, but it's essentially the same dish.

Ozy, It's a work day, your allowed to use pita bread. I barely pumped out bangers and mash tonight and no gravy Yeh I had a fabulous day ..... not. 6 schooners and bacon on a crumpet has been my dinner. I know it will kill me but i will die happy. Ozy that looks great. The one I've done before is finished off with a whisk of tahini, sumac, paprika and lemon juice then a sprinkling of pine nuts and parsley. Comes out great. dave

We've been having a slack week as well, take-away one night, but good stuff, and a big plate of cheese and nibbles last night. Doing a chicken tonight though, had it thawing overnight. Cheers

G'day ozy You are a dead set champ! Your reciepe is a life saver. Wife full of a cold, sons been working overtime, had a late call and its up to me to pull of a meal from work at short notice. Some lamb mince humus and pitta bread and pray that all the rest of the ingredients are at home. Only missed one and that was a green capsicum, I only had a red. Just cooked under the gas grill served with tomato onion and homus. Was a great hit! Snuck in a quik pic Regards dave Od
