I'm sure I must have posted about doing this in a slow cooker before but every time I make it it seems to get simpler, and tastier
I'd decided today was fridge clean up day, not a small task so put dinner on first. Had picked up some nice big Osso and was about to do the whole assembly thing of cooking veg base, browning meat, cooking tomato sauce when I stopped and thought in a slow cooker do I really need to cook the veg ?
So instead and because I was already emptying the fridge to the bench I just processed a big carrot, two red onions, two stalks of celery and some mushrooms and mixed them up raw in the bottom of the cooker.
I then did the seasoned flour dip and brown with the meat, arranged them on top the veg and made the tomato sauce in the pan the meat had been browned in, poured that over the meat put the cooker on and forgot it whilst cleaning one really, really neglected fridge. (It happens when two people both love to cook and hate to throw out leftovers )
A few hours later fridge was looking like new and we actually knew what was in there when a mate came knocking with a six pack.
He remarked that something smelled good, I'd forgotten it was on
Went and checked, it was looking really good so after mate left whipped up a risotto Milanese to accompany and served it up.
We both agreed something, the parmesan I suspect, had made the risotto a bit salty but the dish itself was great, meat just melting and the flavour of red onion made a very nice change over brown.
I don't usually put mushroom in the base either, was using up stuff as it came out of the fridge but I think it will be added from now on.
All in all a good day in the kitchen and I have a clean fridge - geez the stuff that can accumulate, a garbag worth was tossed
