You can use what ever veg you like on this but just try and separate the soft from the hard. Also, if you can source fresh Beetroot, get it, as it imparts an amazing sweet flavour to finish.
Also important, dice everything uniformly, well as much as you can.
In the pic below (from a pic a few weeks old) , I started with Potato, Choko, Pumpkin, Zuchinni, Egg Plant, Carrot, Red Onion, Beetroot and Tomatoe.
Tonights, the same (final few pics) but added some diced red Capsicum.
Heat a heavy Oven safe fry pan till red hot, then add 3 tbls EVOO and 3 tbls Butter, and immediately add all the hard Veg.
Stif fry for a few minutes, then add the softer veg (not the Onion or Beetroot yet)
Stif fry for a few more minutes, then add the Onion and Beetroot .
Stif fry for a few more minutes, then add a tbls or two of sugar and mix through. Finally layer over the top the diced Tomato.
Set in a hot oven for about 40 while you go and attend to your BBQ outside .
10 mins before ready, throw over a handful of grated parmeson Cheese, and continue to roast.
Serve
The crew here reckon they wont eat veg any other way now that I have been preparing it like this.
The flavours, nutty and sweet, with a hint of Caramel, along with an explosion of flavor each time you gulp a spoonful of the veggies combined. Seriously, Its so yum!!!!!

Vaguely similar to a veg thing I do but will give that a go mate, if your judging panel give it the thumbs up... Cheers

The missus does something similar. Although any fresh beetroot in this joint gets baked.
Our difference is that after the veges have been shoved in they cop a coating of breadcrumbs. They brown up beautifully.

Nice and I like the Idea of some bread crumb sprinkle. Missus said I can do this for Sunday, She had beef stroganoff planned for tonight.

Here is my haveago at this dish. OMG, Oh the Umami The flavour is unspeakable. The family loved it and said you can do that again please dad. Was as restricted by what I had on hand but what I did have was Brussle sprouts. Instant super star of the dish. I also took a leaf from Ozdave and sprinkled some Panko
