We decided here not to have last nights dinner as left overs for tonights dinner then the kids put their order in....."Mexican"
I wasn't complaining as I love Mexican food.
Nice and simple. Did most of the prep indoors, then finished outside.

Funny - wife was making noises for Mex, or maybe Tex-Mex last night. Don't have the option until Monday but that looks pretty damn good mate Cheers

No complaints from my crowd when this is brought out. Normally on a Friday night and the kids associate it with happy food because they have a weekend in front of them. I secretly love it too because I get all happy on a Friday arvo as well

Hhhhmmmm just been up the road for a few hours and the missus says on the way back don't forget that bit of pork. The shoulder that I took a third off for skewers.
The answer was that I shoved it in a brine this arvo and I think we might have pulled pork nachos. Done the pork before obviously but never used it for nachos.
Any tips?

It's uncooked? If so knife slice it fine and hot plate it cheese steak style then spread over the corn chips ? Edit Ignore my post, Just re read your post. If its cooked pulled pork, Knife dice it up a bit and go to town
