I'm a big fan of dim sim and dumpling type things and wonder if anyone's got a good dipping sauce? This is one I use but maybe it could do with a tweak.
1 small red chilli, seeds removed, finely chopped 2 teaspoons freshly grated ginger 2 teaspoons sesame oil 5 tablespoons (100ml) light soy sauce 2 tablespoons Chinese rice wine (shaohsing) 2 teaspoons brown sugar

There is one I sometimes make but I just kind of put it together without written quantitys but I'll guess them.
Wassabi Dipping sauce.
1 teaspoon pickled ginger, Mashed to a paste 2 teaspoons Mirin or rice wine Vinagar (Mirin is sweet) 2 teaspoons Lime juice 2 teaspoons light soy sauce ( maybe more at the end if I think it needs more salt) 2 teaspoons wasabi paste or to taste 1 pinch Palm sugar crushed ( Add till flavours level out)
Goes well with steamed prawn dumplings and perfect drizzed over grilled salmon

G'day I used to make a homemade spring roll with fresh frozen prawns and sliced ham and veg. It was a task to make but the family loved them. There was never any time for making a great dipping sauce so I used hoisin sauce straight from the supermarket shelf. It had that sweet/sour/salty flavour that the Chinese do best. It's a staple in the cupboard along with oyster sauce and kecap ( Indonesian sweet soy sauce) Regards Dave

a real simple one that I use and give my grandkids with those shop bought frozen dim sims. 2 - 3 table spoons dark soy sauce and a table spoon or so of minced ginger. Simple and quick to mix up while the dim sims are in the microwave.They love these as an after school snack when I am babysitting them. (so do I).
