OI.................
got me some chilies, and i would like to smoke dry thum. thinkin' of using the T machine, i can get that down around 140f and lower, on p4.
now............the thing is........i have read that to get them dried good and proper, they might take up to 48hrs.
the beauty of the mighty T machine is......set and forget, but i am soooo bloody impatient, i want my smoked chilies yesterday.
what other method can i do. oh, and i gave away my dehydrator. maybe smoke thum for 16hrs or so then sun dry thum..??..
strooth i dunno, maybe just take advantage of the T machine.
so, as you can see, me is rather at a foot stompin' tantrum stage of undecidedness.
any suggestions would be seriously looked at and considered.

Kevin,
If it's going to be good it's going to take time I reckon.
I've been thinking about using the proq without the water bowl and doing a snake with only one or two beads to just give it some warmth and create smoke for as long as I can get the snake to go then finishing them off in the dehydrator. Might even try a zig zag snake.
No dehydrator, try the oven with the door ajar.

140f - is ideal for drying. I just put them in the pellet grill for about twelve hours then Finish them off in a food dehydrator but the sun will do just as good

Gus, For a WSM snake I used an old 8" cake tin in the middle and just scattered the beads around it. Still three high so they don't fall away and break the chain but with such a narrow corridor and the smoker being so high, 140- 150 F is achievable. For ultimate fire control only use the vent imediatly in front of the fire or lit snake. Once it gets to that vent, Close it down and open the next one around so the snake is always burning towards the Oxygen.

Sounds like a good setup.
My last batch I cold smoked for 12 hours then into the dehydrator. Was mainly thinking about Kevin's situation with no dehydrator.
ill give that a crack though.

Why not just let mother nature do her bit......... Sun dried You could do this in a warm car for instance, dried to say 90%, then finish in the smoker for flavour enhancement. Shayne
