INGREDIENTS: 1 Kg Lamb (I used Leg meat) cut to size 1 Cup Greek Yoghurt ¼ Cup Lemon juice 1 tsp Lemon zest 2 Tbsp EVOO ½ Cup tightly packed Mint leaves coarsely chopped ¼ Cup tightly packed Coriander leaves coarsely chopped 6 cloves crushed garlic 1 Tbsp cooking Salt (non iodised) 1 Tbsp Sweet Paprika 2 tsp Black Pepper freshly ground Place all ingredients in a ziploc bag and marinate for between 4 and 8 hours. Don't go much longer than 8 as the lemon will act on the meat too much.
