As you all know I've a glut of Bannanas and they are starting to ripen. Right now is the time to dehydrate as many as I can for chips as this can't be done if they become soft ripe. What ones do become ripe, and can't eat (had two today) , I'll mash and freeze. So I made up a sugar syrup with lemon juice and a little white Vinagar, A little extra citric acid powder and a touch of cinnamon and chilly powder. Sliced up the nanas and only mixed over the syrup, Not marinate. Then into the trusty sunbeam and she's going now. Tomorrow I'll know if I like the flavour and go again with any possible syrup flavour changes. Ive probably three more days to make as many of these as I can

I hope you pull the dehydrating off.
I love dehydrated Bannana, or any other tropical fruit for that matter.
I often get it from the my Asian supermarket, packaged like potatoe crisps, and obviously packaged/marketed, concentrating on children.
I mike the mixed bags. I will grab a pack next time I am there to see exactly what fruits are no offer.

Yeah, it's rare we don't have some around, great snack food, never tried to cook with them Dunno if people realise but the whole dehydrating thing had a huge boost a few decades ago from of all places the Mormon Church. Mormons have a belief in an apocalypse and are entreated to hold foodstocks for a year in their homes. As a result some enterprising Mormons run pretty successful dehydration businesses My family still get banana and strawberry from a local Mormon guy Cheers

Hmm, It's not working. They are dry but not like what you buy. More like banana jubes. Im still going to push ahead as they will be handy as an ingreedient.

It did come back to me that if I recall correctly the commercial products are freeze dried.

This is the post I tried to post 2x, here I go again. I did a batch a few weeks ago, and was interested how you went Smokey. The bananas that grow here are small and sweet, I cut then length ways into 4 and dunked in lemon juice and water. They took 16 hrs in my smoker at 135F and the texture was chewy like a dried peach and the color was very nice. I thought they were pretty good but the family (girls) didn't like them as they had picked up a very slight smoke flavor. Next time I'll clean out the smoker and give it a good burn out first, also I'd like to try a syrup like you did. Was afraid of overpowering the banana taste, no chance of that I discovered. From research I think you need to deep fry them to get them crunchy.

Same experiance as you. It worked but in a hippy kind of way. They a little tough. I don't think I needed any spice in the syrup. They sweeten right up. Ive got tonight to figure a better way

Compared to doing jerky I was surprised how long they took to dry.
