Have been able to get a whole lamb from time to time and this is a great way of using the ribs. For years they were considered only good for dog food, what a waste.
Ingredients
1kg lamb spareribs Toasted Sesame seeds to garnish
Marinade
3/4 cup soy sauce 4 Tbsp lemon juice 1 Tbsp Sesame Oil 1 Tsp minced garlic 2 Tsp Chinese five spice powder 2 Tbsp chopped fresh rosemary
Mix together all the marinade ingredients and pour into a large zip lock bag with the ribs and toss to coat. Marinate overnight for best results.
Drain off marinade and BBQ the ribs indirect to preference then finish off over coals to render off and crisp up the remaining fat.
Serve with a sprinkling of toasted sesame seeds and extra soy for dipping.
Heres how they finished, ready to serve but no sesame seeds sprinkled on yet. We all know what they look like.
Great for beer snacks or with a salad.

Nice, that'll work These would be cheap too. I think ive only done lamb ribs a few times as you never see them and always forget to ask. Im inspired

They look the trumps.
Lamb ribs,,,, yeh, they are not common place but in saying that, a butcher that I sometimes visit, has them often.
I will have to give them a go.
