I know that some know of these cheap knives but new members may not. Kiwi knives are cheap knives available from Asian supermarkets, are hollow ground and sharpen up scary sharp. One shape in particular is the santoku. It's a very handy kitchen knife. If you get a few years out of them your doing well. Due to the hollow grind they eventually loose there honing points. I found out about them a few years ago when I was in the kitchen of a large Gold Coast Chinese restaurant doing fire inspections and noticed a dozen cooks using them and made an enquiry as to what they were. Here is the shape I found most useful.

Yeah I must admit that even though I have some really good Japanese knives I most often reach for one of my Kiwi knives. There used to be heaps on ebay, I don't know if there still is. Asian supermarkets as Smokey said are usually pretty good too. I got on to them as my Thai Sis inlaw has her own restaurant and she uses them.

Also great if you do have some quality knives that others in the family don't quite respect.
Ive since thrown the Kiwi knives I had after they wore out. A set of ALDI knives are now what the family uses. Id still get another kiwi knife but just don't need one now. The only "good" knife they use is a 16cm wostuf Classic chefs but I'm constantly working on it. Mainly from the princess cutting down onto a ceramic plate or steel pan or washed in the sink with all the other cutlery.
Edit, The knife in the pic was tossed as it got damaged beyond repair. A big ding in the edge.

Following this thread I bought a trio of kiwi knives. They appear, and probably are, flimsy and feel cheap, but DAMN can they be sharp!

Yeh, They are no beauty queens but slice soft and difficult foods they are the beast.
