I use Shane's original Recipe for Chinese duck and brine it for 48 hrs. I start the duck high on the spit while the coals are very hot, and gradually lower it as the coals settle down. I usually take about 2 hours to cook the duck. Just started. Under Way Getting there. Plated Breast.

Yeah my back isn't up to carrying and bending, so I "brought the Mountain to Mohammed" so to speak. 4 lockable wheels so I can stabilise it on that slight slope.
