Smokies fried chicken Ive a secret, I want to get it out there but cooking it might do damage. My birthday dinner wish was pressure fried KFC There is a spice mix in the US from Marion kay called 99x, and its basicly the secret recipe less one ingredient. The Colonel and Kay were mates and that was the deal, Hence 99% The last 1% ? vanilla sugar KFC outlets in Canada were using this product and no one bat an eyelid,, Until kfc found out Anyway, My birthday dinner. Skinless chicken thighs. The kids said better than KFC, ,, Of course it is. its what KFC was like in the seventies. Bugga, That ait it This one

Here is the link to 99X, marionkay.com/product/chicken-seasoning-blend/In chicken seasonings, Options / 99x @ $22 US. for 25 OZ Per cup of plain flour 1.5 tbs 99x 3 tsp flake salt 1/2 tsp vanilla sugar or dusting Egg and milk for a wash plus a half tsp of vanilla sugar, I soak 30 minutes. Coat and fry. The safe way is to deep fry for colour only then sit in a 100c oven till cooked through. I use an 8l Fagor Duo pressure cooker with only an inch of oil. Once the oil is at 180c, the pieces go in and the lid closed. Once it starts hissing the cooker is "feathered" over a small hob to just keep the pressure without letting it over heat,, which it can do. Cook five minuts for these smaller bits then release pressure and run pot under the tap. Fagor also make a dedicated pressure fryer that can also be used as a normal pressure cooker and that is the one to get.

I may do a shallow fry for colour then in the oven as recommended. Im gonna hook up some 99x !

I just went through the order process and yeh,, I see that its changed from my order 12+ months ago, Maybe send them an email.
If they still won't ship, you could use something like shipito. I've used that service and was seamless and cost about the same with an $8 or so fee on top. Let me know how you get on.

I can't remember for sure but I think I ended up getting a similar experience where they gave a quote. If you can , get them to fill the box with hard to get stuff like Canadian savoury herb or tahitian vanilla powder if they have it. 99X will last you a long time so I didn't mind the cost with shipping.
