Looking for ideas for recipes to use the expected harvest of chillies.
Got a heap in but some are just a bit scary. 8 Jalapenos, 1 Trinidad Scorpion, 3 Chocolate Ghost, 2 Aji Limon, 2 Aji Amrillo, 1 Siam, 2 Fatali, 2 Manzano and a couple of others I've forgotten the names of.
Planning to smoke, dry and powderise the milder ones but want to make some sauces from some also.
Thinking of apples for one, tomatoes of course for one and maybe mangoes at the end of their season when they're cheap and might even try a kiwifruit version.
Anybody got some ideas?

I was just about to suggest that site. Last year we were getting an occasional delivery from a mob called Aussie Farmers, will use them again but they get a bit pricey compared to the supermarkets sometimes. One particular time they must have had a glut of nectarines, left far more than we had ordered. I had an excess of chilies at the same time, forget which but pretty hot so made up a marinade/sauce to use up both. Nothing very fancy, processed, boiled up, added some salt, some vinegar and tasted. It was a little too good, family absconded with most of it, made for great chicken dishes apparently. Shall have to see if nectarines get silly cheap again this year:) Cheers

Agree that stone fruit, Particulary peach goes well with chilli as a sauce base. I failed in my last attempt, But making a fermented and strained hot sauce is pretty good. This time I'm going to use salted cabbage as a starter With the Jals, what about chipotle in adobo ? I've not made it but have looked at it.

Got all inspired so I started a mash yesterday. Hopefully this one will start to ferment.

Definitely doing chipotle with the jalapeƱos. Got a few ideas going through my head.
See how many I get first I suppose.
