Here's a handy tool for calculating the amount of cure #1 to be used in a brine or dry cure. Created and shared by Martin, also known as DiggingDogFarm over on Smokingmeats forum. Mick not sure on the etiquette regarding posting links to other sites, but as I am sure you know there are some great folks and a massive knowledge bank there if you got the time to search it. Hoddo, a forum owner that is paranoid about members placing links to other forums of interest, In my view should not run a forum. It boarders on scociopathic thinking. People stay because they like the place pure and simple. Go ahead and add the link. It's relevent and goes far deeper than my knolege on the subject. Our members that go there might bring back some excellent knolege to share as there interest take them. You did Edit, also add the information if using a wet bath brine with total weights ect.
