Had a go at adapting the Cambodian Chicken recipe from the Spice Trip to BBQ and was happy with the result. Used 1 Desert spoon of cracked black pepper, 1 tsp Tumeric, 3 cloves of Garlic and a thumb size piece of ginger to make a paste then added the juice of a lemon and 3 desert spoons of olive oil to make a marinade. Stuck a kilo of chicken drumsticks in a zip lock bag and poured in the marinade, massaged it well into the flesh and popped it in the fridge for three hours. Realised this morning that I forgot the pinch of salt but didn't miss it when I tried them. Into the kettle with heat beads and a banksia nut to give it some smoke and brought them up to temp. Finished up nicely. Big strong hit of pepper made the test one last night spicy and very tasty. The other ingredients were there but the spiciness was what I was after. Made them for work lunches so I'll know later today how they go with left over fried rice. The eldest son took some to school to have cold so he'll tell me what he thinks for sure.
