After screwing up a simple lambs fry, I have to step back and take a hard look at myself. Two cooks comming up. First is Pastrami with my excellent pastrami rub and then later a Hamed and low smoked duck. Both these dishes are tried and true so be ready with pencils as I won't be holding back. Its redemtion time
