Tonight I make lambs fry with onion and Bacon on mash. The wife won't have a bar of it but I've layed orders to keep hush in front of the boys. Normally done on a fry pan but I'm going to do this on in a baking pan on the pellet grill ramped right up. Im taking pics and will put up a recipe.

One of my all time favorite meals but don't usually do it in a frypan either. I think of it as a variation on a shepherd's pie, pre-cook very thin liver strips doused in seasoned flour in a frypan with bacon and onion in butter then pour into a casserole dish with a can of diced tomatoes and usually some sliced mushrooms. Cover with a thick layer of mashed potato, a good grate of cheddar and maybe some sliced tomato on top and bake until the crust is golden brown and crunchy - delicious Highly adaptable in that form to the grill I'm sure but keen to see what your recipe is Cheers

Eh, kids.... I must admit frying in a baking dish is dodgy, but, live and learn. The real thing around liver and kids is to make it so damned tender it melts but picks up so many of the other flavors in the meat that they can't complain Nowadays I spike it up with chili, decided no-no when the kids were the audience Not to worry, the odd failure teaches us perhaps more than success, or something Zen Cheers
