Pork neck cured and kept at 13c. The casing Is ox bung. This is seriously good.

Hell yes, I was sweating like a bastard when the knife went in. I learnt a hell of a lot from this. Did it in a small Aldi wine fridge with a small fish tank heater in a glass container of water for the first six weeks to keep humidity up around 85%. After that I took the humidifier out and just kept it like a bottle of wine. It's very dense and will need fine shaving. can see this used as a flavouring to some pasta dishes. Round two, A bigger one,,, or two.

Bloody hell Mick,,, i am lost for words That there is a master peice!!! Disipline and commitment will only pull something like that off, not half hearted dilly dally goes....... Youve gotta be pretty proud of yourself right about now,,, i know i would be. Probably a dumb arse question, but have you tried it yet? And your right, now that youve nailed it, a bigger batch next time to present larger reward for the given effort. Nice work mate Shayne

Thanks guys, It tastes exactly like prosscuto. My Aldi meat slicer is broken so I bagged it up till I get another one, Probably a cheap Kogan job.or the eBay Maxim one. Unsure which is better
