The missus came home from Aldi with three 500 g packs of vintage cheddar this morning. She said smoke these. Odd I thought  But as it turns out she has been taking packs of my smoked cheese to her work at council and flogging them  Apparently they want more. I did these with a mix of Aussie BBQ smoke red gum pellets and apple wood dust. I also smoked them a little longer then normal as I know this is going down on a Friday night drinking beer and watching footy. So I made sure it was well smoked for cheese. About four hours.

Pretty much at cost when you figure in the wood and packing. But they like it and I like giving it to them. Its an interesting world up here. Everyone makes something and out it goes at cost. More than that there is free. My missus has a work colleague that is totally Aspergers. He lives alone and she feeds him with our left overs she takes into work I didn't know about it until I questioned her about where the hell is my left over cheese steak sandwich ? Half of this years stews went to this kid  I think she sees her own son in the future. |

I was kinda joking, appreciate the effort that goes in. That's the definition of a healthy society in my opinion, we get something similar around here with elderly neighbours etc. (Says he who is 62 tomorrow ) Had lunch with one of my daughter's today, her treat, which was kind of a first She's been diagnosed as possible Aspie, but no one her least of all takes much notice, just who she is but it can be a very real thing. At it again, The chedder for the wifes bosses up comming party and the Swiss cheese is for me Its on now and smoking it with gmg gold blend pellets and apple saw dust. It's a little warm so I threw a bag of ice in Groucho,s smoke house.  |
