A variation of the standard coconut loaf, This one packs the flavour of a bounty chocolate bar. Ingrredients, Batter 1 1/2 cups fine desiccated coconut 1 1/2 cups SR Flour 3/4 cup sugar 1/2 cup milk 1/4 cup butter milk 1/4 cup Malibu Caribbean Rum Marbling Syrup 1/2 cup chocolate syrup (for ice cream) 1/4 cup Vok Creme de cacao liqueur Method Mix batter well by hand. Pour into greased or lined cake tin Mix syrup and chocolate liqueur and warm in microwave for easier flowing through injector. Inject batter in a spiral motion starting at the centre. Bake in a moderate oven (160c) for up to an hour or until a scewer comes out clean.

Mmmmmm, that looks pretty do-able. Might have a go at that one. Oh and BTW, great looking table Shayne

Looks good, how does it taste ? I would have thought 3/4s of a cup of syrup would have given a more pronounced marble but it's the flavour that counts. Cheers

All up it was enough syrup, but as can be seen a lot sank to the bottom so I would line with baking paper next time. The taste is similar to heavy mud cake in texture but tastes like a bounty bar . I think the butter milk really softened the texture and helped the loaf rise with out it turning into cake
