So I've been racking my mind about making a marble cake using an injector. Im not much one for fluffy cakes and prefer dense and rich adult ,,, read liquor cakes. So what to do? Then it jumped out. That simple coconut loaf I posted down in sweets has almost the right texture and if I swirled it with dark chocolate syrup and some sort of liqueur to really load it down ,, I d get a bounty bar cake My question is what liqueur ?

Tia Maria would go OK I reckon otherwise do the Oloroso and coffee mix used to make a good tiramisu.

I was thinking a white liqueur that gets mixed in with the white coconut batter prior to any choc marbling. Bacardi rum or I'm not sure if there is a coconut liqueur.

Try Kirsch, create a Cherry Ripe version An ex-wife of mine used to make Black Forest cake by injecting the liqueur, knew I'd seen someone injecting cakes. Had rather a long list of flaws that woman but cooking was not one of them Cheers
