Well, for those that are not aware of my cold smoker setup, I use a Weber JJ as a smoke generator, that is attached to a bar fridge via a flexable 200mm dia air con duct.
It works perfect (well almost) but I have found in past uses, I have a little trouble with the side air dampers not sealing enough against the kettle body.
As I need the lid damper open at 100% to allow full smoke to continue on to the smoker, sometimes I have found my snake somewhat racing due to the good air flow received by the snake, due to the poor seal at the side dampers..
On my last cold smoke (when I tried a run at Micks Whiskey Salmon), I found this was happening to me, but a quick think about it, I came up with a bush mechanic approach, and totally blocked up the damper penetrations with Alfoil. This stopped all air flow to one side of the kettle.
The other damper on the opposite side of the kettle was in the closed position, and because of the poor seal, the minute amount of air that was actually getting in, was just enough to keep the fire going, and pull it back to a snail pace which was favourable to my needs.
It was smooth sailing from there on
Problem is, I needed a more permanent solution as the holes plugged up with foil gets dislodged when shifting the handle to remove the lid.
Here's what I came up with..
Aluminum checker plate was hole sawed at a bigger dia the kettle penetrations and then pop riveted in place.
I gave it a dry run tonight and now she burns along as slow as a candle
