I've been buying this stuff for years and although it's ment for seafood or chicken, It's also good on beef or pork. Some how I think my Australian pallet accepts it more then the typical USA heavy onion, cummin, garlic rubs out there. If you can grab a can of the original then do so. But for those that like to mix? Here it is.
Bay Seasoning. 1 TBS Ground Bay Leaves 2 1/2 Tps celery salt 1 1/2 Tps mustard powder 1 Tsp black pepper 1 Tsp white pepper 3/4 Tsp ground nutmeg 1/2 Tsp ground cloves 1/2 Tsp ground ginger 1/2 Tsp paprika 1/2 Tsp Ground red capsicum or mild chilli 1/4 Tsp Mace (optional , if you can get it) 1/4 Tsp ground cardamon.
Mix up and bottle

Mmmmmm. Some interesting flavours going on there Mick. I love chopping and mixing, so will try this one for sure. I can see you have the optional, on the Mace. I tried getting this recently, and it turned out to be a nightmare for me, that so, I had to abort cooking the recipe as it was a principal ingredient. Celery salt too,,,,,, is a hard one to come by Shayne

Interesting, have all of those in the spice rack. Mace is an odd one, only one place that I know of around here ever has it as well. Celery salt never any problem though. The range of spices and herbs around these days, and the brand choice, is becoming a bit bewildering to say the least - takes up half an aisle at my local Coles Cheers

Yep, this would be this guys take on it. And he's onto it. I do like the ground celery seed rather then celery salt. A bit if plain salt could be added to the OP in lou. Old Bay or Bay rub is still my go to and I don't righty know why. There is just something about it. The bloke that formulated it was a magician. Maybe it's close to the mederterainian flavours
