This is a great economy cut however, you get stuck with the thick meat cap which, can be tough and finish drier than the rib meat.
Every time I have BBQed these, that has been the case.
The eaters aways hits the meat near the bone, then the other if hunger still holds strong.
Sooo, an experiment was carried out, SS the Asado over a long period, flash sear over Charcoal, then baste with a BBQ sauce (BRays) then foil for 10 n=mins to keep warm while waiting for the vegetable back to come along.
Soo, these were lightly rubbed then sealed
Then into a 140F bath on Wed evening And exactly 24 hours later, they were ready
All parts of this was moist, juicey and tender. A massive improvement to the way I usually do these And will be doing them like this always moving forward.
I am loving this thing.
I haven't turned it off yet, doing back to back cooks.
But, the power was pulled last night to give her a rest
Looking further down the track, this thing will really pay for itself when entertaining a small crowd.
In the past, I have often felt under the pump and not relaxed in these situations, bbqing for a crowd and having too much on the go at the same time.
With the SS, I could have meats cooked and ready to be quickly finished off on the BBQ.
It will surely be a pressure reliever.

Those asado ribs look magnificent Shayne, you can certainly see the moisture right through after they were cut. Am contemplating buy a sous vide from Aldi this afternoon after work to try it out. I like the idea of leaving in sous vide overnight or all day and then a quick char at end. At the moment i am limited to Sundays for all day cooks because of work. Stewart

Just be carful with that Aldi one.....
The tank capacity is minimal @ 5.5 litres.
The one I am using is double that @ 11 litres.
As you can see in my pictures, I had to put the ribs in on the diagonal....... it was tight.
I could have lopped them in half I suppose......
Just thinking forward, this one measures 315mm x 250mm internal plan view, and by the looks of it, I could lay down a bone in Lamb Shoulder (Shank attached) on its flat, with not much more room on the sides.
The Aldi one........... without knowing its internal plan view size, its hard to judge, but if it is proportionate to its Cubic capacity, I doubt it would handle that.

Thanks Shayne, Was not aware of size differential, Sunbeam machine is also 5.5l. Stopped at Aldi and they were out but have found the Breville on sale at Myer for $199, pretty good price--will ring tomorrow to see if they have one. Stewart

Went to Myers, checked out the Breville sous vide and felt no inspiration so i left the money in my pocket. Bought some asado ribs on the way out--put them in the slow cooker for the afternoon then marinated in a smokey BBQ sauce then finished over charcoal---they were magnificent. Stewart
