I've been umming and hahhhhing over this for a long time, saving my pennies along the way...
then yesterday, thought bugger it, and went out and left a deposit on a F R Dick.
i got this for a pretty fair local price. Could have purchased one from the US but at the End the day, it probably would have saved me 20 bux had I had done so.
the guy in the shop has ordered it fro the supplier, and will have it in by early next week,
it's first task will be a few blackbutt hams when it gets here.

I think with the amount of meat work you do it's a worthwhile investment. Also your pretty much hooked on your hobby so it wouldn't be like feeding strawberrys to pigs. Did you ever get a salinometer? They are handy to get the right saturation using different brands or types of salt.

Yes, the money factor clicked over in my mind more than once, I grant you that.....
But what persuaded me, unrelated to food was fishing..
I have 10 fishing reels in my arsenal, all of which are over $300 a piece each.
Do the math, that's a lot of dosh,,,, and some don't get used when the year passes.
The cost of this, then offset that with the entertainment (which it will provide),I will get from it, is money well spent...
And yes Mick, I do use a salinometer.

Good stuff, Brush that buyers remorse away. Soon you will forget the pinch. Me? I'm just trying to win Aussiebbqsmokes injector over on the other forum Ill probably buy one of his anyway as the capacity isn't too shabby and glass is good. Anything is better than the POS I currently don't use. Its a plastic tube sheafed in SS and thay are a cess Pitt for trouble and impossible to properly clean.

I picked her up today
Its much bigger than what I anticipated it would be.
I am very happy with the build quality, and am dying to use it.....
One thing though (and I always knew this), that I think the inconvenience of this injector will be that it requires two hands to operate it.
Think more on this I will.....

Are you worried about keeping say a 3 kg lump of meat still while you go to work on it? Surely there is a way to hold it captive. You might find with the F Dicks mass you can spear the meat somewhat

I am just chewing the fat at this stage, as I wanna try and use this for all my injecting needs, whether it be large cuts or small.
Smaller things say, as I am right handed, the left hand will need to hold the meat, in order to insert the cannula. Then, that left hand will need to move from the meat, to grab hold of the body of the injector, soiling it so to speak.
Not really a big deal but, with things like Chicken, will need to keep an eye on hygienics.
Another prob that I have been considering with this, is the uptake of dormant brine in the hose.
The recipes I use for Ham, gives a specific amount of wet cure that needs to be injected. If say, (thinking out aloud here), the hose (and whats within the chamber of the gun) holds 75ml, some mathematics will need to be undertaken to account for it, as well as cure that has leaked from the meat, that needs to be reinjected.
Some more thought on this will happen, that's for sure.
As with anything new to you, trial and error, then settle on what works best

I used to grapple with holding stuff still on the bench when prepping food, all sorts of stuff, then I picked up some of those plastic alligator clamps at Bunnings. In combination with a weighty chopping board that is on raised feet no more problems Sometimes those clamps are a bit aggressive but can be tamed quite easily. They do wear out, or rather fly apart sometimes but pretty cheap, amazing what you can find to pervert to other uses in a hardware store Cheers

Right, been thinking of how I can solve the pickup issues this gun may have.
For example, the two Hams I am about to pump this morning require pretty accurate (10% pump) amounts of sweet Pickle to be injected.
Piece# 1 = 480 gr, Piece #2 = 419 gr.
Putting each amount in a cup say, physics tells me that the screened pickup tube will not take all 100% of the Pickle, leaving some behind.
Still have to test this and if so, may need to do some mathematics', adding and deducting the balance if left Pickle or, I am thinking a gravity feed setup.
Will post my solution soon.

Well, I used this new injector this morning and ive gotta say..............
What a WEAPON.............
I could have went crazy with this thing on my Pork legs, inflating them to resemble a Football
I got over my uptake dilemma, and used an inverted juice bottle
I was happy to see that pickup was nearly 100%
Also, cleaning was a breeze.....
And am over the moon at how well the Canula distributes the brine over plenty of exit ports.

That's right Bill.
This bit of kit will see me out that's for sure....,
The positive integrity of the Cannula alone, will make it pay for itself, that's for sure.
To date, I have used and thrown out (due to Cannula failure) so many injectors, it starts to get tiresome.
I will use my Dick for life
