Here's an easy way to do a stack of flatbread on a pizza stone with minimal mess. Make your favorite dough in a bread machine and cut into sections Stretch out a bit by hand and place between 2 bits of baking paper and roll out nice and thin Trim paper to avoid it catching on fire, you don't need to be fussy as long as paper dosent hang over edge of pizza stone. You can chuck em in the fridge at this stage if you are cooking later. bring up to room temp before cooking Get your pizza stone nice and hot, I run all burners on high. Peel one side of the paper off and hold other paper side flat on your hand and slap it onto the stone.Close the hood for 30 to 60 sec then open and the other bit of paper will come away easily, flip the bread with tongs and close the lid for another 30-60 sec time to eat

Call me Mr magoo, I completely missed this great idea The lovley is always buying flat bread, or wraps from the supermarket for kids lunches and I've always been uneasy with is as the damn things last way too long in there packets for my liking. With this I can make a good batch and freeze them like Filo ready to cook

Yeah, I dunno what they put in the shop bought stuff but it sure doesn't go off in a hurry. I'd meant to post been using this basic idea to make tacos and nan bread easier, same basic idea, different dough, smaller results One of my daughter's who seems to live on carbs saw me making some tacos and has been applying the same trick to making her beloved pancakes, works a treat. This is the recipe I use, cant remember who posted it but its very good
250ml milk 100ml plain greek style yoghurt 1 egg yolk 2 tbls oil 1 tspn salt 3/4 tbls sugar 4 cups bread flour 2 tspn dry yeast 1 tspn bread improver optional
I mix in the bread machine then straight in the fridge till I am ready to cook...cut into sections and a bit of a knead to warm it up and get the yeast going then roll out.

Yeah, that's very similar to what I use for flat bread. I really must ask my crazy daughter just what her mix is for her pancakes - I really hadn't thought about it because I so rarely make pancakes but did whip up a batch this am for breakfast. No way would my batter mix work for this great idea, but hers does, it doesn't pour, she spoons it out and gets these thick, fluffy stackable pancakes. I've seen her use the trick, the batter sits there on the paper, she spreads it out, puts them in the fridge and the paper peels off easy when she is ready to put them in her BiiiG pancake pan Memory says she sweet-talked a chef at her favorite pancake house Cheers

Sounds like it could be a sour cream based pancake mix, no milk.
