Way past time there was another thread here, I'm sure we actually do cook in the kitchen at least sometimes
I had a day of shopping followed by coming back and realising some weeds needed some attention, which led to a garden day between watching V8's, they were just up the road but on-course race watching is just a hassle most of the time, and sorting out some stuff in the kitchen, like a door that REALLY needed re-installing before it brained someone - all done now
So Q was a little too much time outside, especially with rain brewing and the kitchen work had led to an idea, that and reading the Leggos cookbook as mentioned in another thread.
I had some chicken thighs so diced up three from firm and gave them a sear in oil and butter and set aside, before using the same pan to fry to soft a sliced onion, some quartered up small potatoes, some sliced mushrooms and some garlic. Then added a can of crushed tomatoes, tomato paste, some pepper and bush spices with a grate of pink salt and a can and a half of water and let it reduce.
Part of the kitchen clean-up was finding a selection of different cheese nubs whilst cleaning up the fridge so had processed them down for grated cheese anyway. I think there was some cheddar, Pecorino, Gloucester and other bits, but don't quote me Left over cheese that's what I usually do with it.
Boiled up some pasta spirals - those are SO easy to make but I confess, these where store-bought dry
Put the pasta in a largish shallow baking dish, mixed in the chicken sauce and gave that mix a glug of red wine whilst stirring, at the end dotted around a bit of Frank's hot sauce - just in case, might need a kick.
Gave the bake a generous coat of grated cheese, dotted it with sour cream and a last grate of pepper and let it rest whilst the oven heated to 180C.
I had meant to stir in some garden veg but the dish looked full enough with enough flavor.
The oven just let me know it's at temp so about to put it in, see how we go and if I remember to take a pic
Not exactly a pre-planned cook, but hey, made use of some stuff to make cupboard space and it smells pretty damned good, we'll see.
