This came from my grandfather & it's a family fav. I may have to beg Mum or my sisters for a jar - I've run out!
6 lbs tomatoes (ripe) 2 lbs onions 2 lbs sugar 2 tablespoons curry powder small handful salt 3 tablespoons mustard 1/2 teaspoon cayenne vinegar (brown) a few dried chillies
Cut up tomatoes, sprinkle with salt & stand overnight
In the morning drain excess fluid off tomatoes. Place tomatoes & cut up onion in pan with all ingredients except curry powder & mustard
Barely cover with vinegar - boil for 20 minutes
Mix curry powder & mustard with a little vinegar & add to pan. Boil another hour or until it looks cooked to you.
If it seems too thin - thicken with some plain flour mixed in vinegar.
When warm bottle in warmed jars & seal.
