After trying my hand at a bit of Herliciculture, Embarked on a Culinary adventure tonight....
Pan fried Garlic/Sage Bacon and Escargot (Garden Snails) with Tri Veg Fettuchine.
It was yummy, but at the same time sad, to see my little friends go, after a full three weeks of 5 start Hilton living, being hand fed the best of food, then cleaning up after them .
Double sad, as the rest of the crew would not come near this dish, but the upper, I had the lot for myself, savouring every last bite.
Although delish (reminded me of Abalone), probably wont do this again as its a lot of messing around/work for only one feed
Sooo, how I did it.
36 good size were collected, washed and placed in a pen.
And fed on Carrot, Flour and Lettuce (they didn't like the Lettuce much), and fresh water.
Cleaning the pen out every few days, then giving em all a good wash.
Approx 2 weeks of TLC, one last feed before the week long fast on water alone
Give em a final wash with a mix of b vinegar and water, then they are ready to be cooked.
Bring water to a rolling boil, and place em in and high simmer for 5 minutes
Then refresh a few times under clean cold water, then remove the meat with tweezers.
On your side burner, heat a wok and add Evoo.
Sautee Bacon, Snails with 2 cloves minced Garlic
After a few mins, add chopped flat leaf Parsely and Sage.
Squeeze in the juice of half a lemon.
Season with S&P, then toss in cook Fettuchini
Add fresh Parmesan Cheese and then drizzle a bit of extra EVOO over and ................................
