Cut the sinew from the shank, marinate in Olive oil and Garlic. brown in the Kettle using Banksia pods as a smoke infuse. Place in Dutch pot with chicken stock and drizzle in Maple Syrup. Adding Vegetables Back in Kettle with more pods for around 3 hours. Plated. Please enjoy Cheers. Titch

Love this, I don't think I could bring myself to cut out the sinew, That's the best bit . Id mostly only cook four at a time and my Dutch oven is a tad too big to have them sticking up like that. An excuse to find a new CI pot
