Stock up on the 12 month rain checks then
I have one in the Brine now.
Gunna steer away from Asian style with this one, and apply some Italian influence to her.
Made up a brine flavoured with some nice fresh garden picked herbs.
And, will removed it later today (would have had 24hrs by then), then rack it in the fridge to kick off the skin dry, then room hang it under desk fan tomorrow morning to continue the dry.
Sunday night Duck.... I cant wait

Ahhh, I didn't read your earlier post correctly.
Yes, I just viewed the catt online and yes, you are correct.
Still though, worth a try.
Half of these young ones working these stores wouldn't know what day of the week it is.... if you know what I mean.
If I was at a store and they had none, for the sake of a simple ask, you could leave with something for the future, not empty handed

I know where you are coming from and if it were not for the fact that we have been dealing with the same Coles store for 20+years and know most of the staff on a first name basis i'd have tried it on. Friendly helpfull staff are worth more than a few ducks to me.
BTW. keep an eye on next weeks catalogue, last time the ducks were on special for 2 weeks running.

I have something special in mind for tomorrow, But its done in a wok. Zhuang Preserved Lemon Duck. Hard to get ingredients so had to substitute a few. Ill be using a side burner as it calls for medium heat so ill get away without a rambo crab burner.

I think they must fly under their own steam to WA, last time they didn't appear until end of the week and only in the bigger stores. My last one was not a great success, very tough bird but I'll be looking out for them and give it another go Cheers

I was in a national retail chain the other day when someone mentioned "raincheck" to the checkout operator.
The reply was a simple "I don't need to check if it's raining I can see from here it is" Nobody at the tills knew what a raincheck was.
Don't hold out much hope on getting one.
