Lamb / Chicken combined gyros on the mini spit. Bought pre-marinated castricum lamb shoulder & butterflied chicken breasts - from Castricum butcher. Total cook time was around 3.5 - 4 hrs, over gidgee, mallee root & a red box chunk for good measure. Method is to combine the fillets together, like lamb/chicken/lamb/chicken etc. As the chicken is skin-on, and the lamb has plenty of fat, it just doesn't dry out. It was also basted with a mixture of olive oil, lemon juice and oregano.

How big are the lamb pieces, 100x 100 or so?

yeah, that would be close perc, similar to the chicken, though mostly thicker. Sometimes if they're too large, you can either fold them over onto the spike, or slice em to fit.

Im inspired to do this again, That looks great. There is a recipe with blended capsicum for marinating. Must find it or its owner.

The gyros recipe Gnol put up on ABBQF has roasted capsicum in it and is absolutely brilliant, started off as a one of and is now one of the most commonly requested dishes by the family.

Thats the one, Yes it was a knock out. Made a total mess of the kitchen but his recipe was the best Ive ever cobbled up.
