1st day of June Supplies of whiskey smoked salmon are extinct and have but one 250g block of smoked cheese left. 20 degree days here have been nice but I need it down to low teens. Ive got three KG of cheddder and a kg of Swiss waiting to go, Should get a few slabs of salmon in a week or so, Maybe sooner if this cold snap sticks. Its been so Long Im going to require a re read of my own post from last year.

Yes indeed, been thinking about this. Bacon is on the list. Still have some salmon in the freezer. Last time I got a whole Salmon. About 4kgs. They filleted it. I smoked half and used the other half for meals. Think it was cheaper than just fillets. $18 kg for the fish v $30 kg for a fillet. I think Shayne found tails at a good price?Cheers

I regularly smoke salmon. I buy the fish whole and ask them to cut 2 fillets (one each side) and I pin bone it. After weighing before and after it works out pretty much the same as buying the pre cut fillets, but I recon you can be sure of a fresh fish when you can check it out before its filleted. Surprising how much weight in the head and frame. I brine the 2 fillets for 6-8 hours then cold smoke for about 6 hrs then vacpac and freeze. That way its ready to whack on the barbie (plank) or whatever, and you'd never know it was frozen. Last year I smoked 6 kilo of aldi budget cheese and it was amazing, crumbly and tangy like a good vintage cheddar, went back for more a few months later and although it was the same brand it just wasn't the same cheese, more of a plastic texture and less taste. Didn't bother smoking it, I guess I got lucky with it first time and got a rare batch. This year I'll go for a better quality cheddar, any suggestions?

Dunno if you will have it where you are Hoddo but Nath put me on to Colonial 1KG waxed wheels and have to say amazing cheese we are on our second and it seems to be consistent. It's a real cheddar, you'd have to remove the wax of course but no real issue. Failing that, and please do not laugh, Coles brand mature cheddar is a damned good cheese, good flavour, nicely firm but crumbly and at usually eight buck a kilo the price is right - mind you here that Colonial is $11 and definitely superior Cheers

Just did some ringing around the Gold Coast fish mongers and secured some Ocean Trout filleted for $17.90 per kg. Pretty happy with that. They arnt quite as big as a normal salmon at 3kg per whole fish so I might end up with four fillets. Pick up tomorrow so it will be a Sunday smoke.

I prefer the ocean trout to the salmon, there's not much difference but I think the trout has a bit more oil and a softer texture also a bit more stocky,shorter and deeper if you compare the two of the same weight . Thats a great price Smokey.
