Had a chat with my trusty butcher and he prepared two for me that were grilled on the baby Q. One was plated for dinner with roast asparagus, roast cherry tomatoes and hasselback potato and the other was served for lunch the next day cold roast beef style. Really happy with the steak and i often use this cut of meet.....

I don't understad why this cut is not standard, Rather than the cross cut Buterfly steaks with the gristle. Nice work, And a much better way to enjoy this very tasty cut of beef
