I know it don't look much, Being a curry and all but I'm really starting to nut these things out. Using real spice rather than a paste really takes it to another level. Prepared curry mixes are used around here next to nil (I use it when preparing curried snags, that's about it).
With all the Indian supermarkets you can find here in western Sydney, all the ingredients to blend your own are on hand, which I do.
If you can ever pick up a "Wonerfull way to prepare Curries" by Jo Ann Shirley at a garage sale or flee market (prob on fleabay too), grab it as it has plenty of worthy recipes to go with. Printed in 1978, I use it all the time. Family favourite in it (the kids scream for it) is the "Special Chicken Curry",,,, its a cracker ![:D](//storage.proboards.com/forum/images/smiley/grin.png)

. Each bag inside is numbered and the instructions on the back tell you what to do with each, Grind bag 1 ,,,,,, etc. Check the retail list. Ten bucks each though the results are fabulous.

The gone fish is the last of all thirteen.I have left The josh is a standout, The vindaloo I couldn't feed to the kids. The Bombay I couldn't feed myself but the Taste makes you soldier on. Yes it's dear but it makes a lot of curry and we all know curry keeps and feeds many meals. Most of them call for 1 to 1.5 kg of meat but you could easily upgrade that to 2 kg and same for upgrading the extras, so in that regard the price is not so bad. And is better than the local takeaway. I have nothing to do with this company but the missus and I have been having a ball in the kitchen when one of these packs come out ![:)](//storage.proboards.com/forum/images/smiley/smiley.png)

Vindaloo is something my kids, in their twenties are only just appreciating so not surprised, I'm going to assume the Bombay was as fiery as it usually is ? ![:)](//storage.proboards.com/forum/images/smiley/smiley.png) The ones that especially interest me are the Malaysian and Ceylonese, both countries whose curries I adore. Build yourselves a decent spice rack and stock it up. Use small plastic containers for the most used items so you can buy bulk packs. We have about 40 bottles in the spice racks and at least a dozen containers for the bulk stuff.
