that looks a cracker of a dish,... never thought to use pasta shells.. we make something very similar to this and is one of our go to favorites at home...however we use lamb shanks + polenta. Traditionally it is a lamb dish mate but the literal translation is "hollow bones" without specifying meat type. Given what has happened to the price of lamb shanks courtesy of celebrity chefs using beef is not only tasty but also sensible Cheers

Chris I was of the opinion that it was traditionally a Veal based dish.
