G'day Smokey, I have indeed received a lot of good information which I've been mulling over in between my daily chores ;-). At this stage I'm going to give the kettle a bit more attention. I bought another grill grate for it and I'm going to do as Shayne suggested, foil one to act as a heat deflector and invert the other one. I've got a lamb shoulder in the fridge which I'll have a go at doing on the weekend, weather permitting of course. I was very tempted by the BBQ Galore dragon kamado which is on sale for $299, but the wallet said no.

Good stuff mate, Im thinking that if fellas like Shayneh can help you nail the kettle and achieve great results in low and slow, You might have different thoughts down the track and would have a better idea at entertaining another bbq and what it might be. Things change, New products, Your cooking style, Family tastes, budgets, people you meet that can put you onto certain fuels ect. Your not in any way disadvantaged with a kettle that's for sure.

There's always the option to buy "Gordy".
Kev has put it on the market and that weapon will cook anything you put in it. Have a look at ABBQF.
Wish I had the dollars. It'd be a crossroads for me too. I'd either have to live in it or be cremated in it.
