Another question If I may, or maybe not a question but a self observation Im a bit of a pan shaker and flipper hot and fast. I've scratched the hell out of my current ceramic cook top moving food around. Spoke to the missus tonight about induction and she said she does not want the same damage to happen. I think that is why I originally thought gas. I've had gas before in another house. So my style might rule out induction.
This is kind of how I use a fry pan.

OK Smokey, If you are like that go for gas. Sorry but I think you'll mark the cooktop. Maybe they have made better glass surfaces but - check. Personally I treat my cooktop gently. I lift off to swirl the sauce, I move the food not the pan, but with some surprise I do this at home but not at my parents who have gas - where I am like the guy in the video. Suspect it's a dish / burner angle thing. with gas the burner / pan moves around and you need to move the pan around to control heat. So could just be a bad habit but then...... style comes to play. I have not scratched my cooker but! it is expensive so I'd go gas if this is a concern.
As I've said: 1. Induction (& a very very close) 2. Gas 3. ummmm wood or vegan (sorry had to say it)

Cheers mate, Your help has been awsome. I now have an understanding of what all the options are. I think my missus would like the induction but she knows what I'm like. Even I would like the induction but I know what I'm like I made that dish in the clip tonight and dang, I'll be doing it again. No pics being a first go but it's a winner. A few changes were made in that I floured, Egg wash with parsley then into panko. I did one of those YouTube university courses and took what I thought was the best bits of them all.
