I have a piece of skin in my freezer, leftover from a slow-cooked pork shoulder. I removed it before I put the neat in the slow cooker. Any good ideas about how to make crackle out of it?

Yeh, score it, oil it, salt it and put it into a really hot kettle, indirect. Be sure to prop it up on one side using a Rib rack or anything else you have on hand. Your aiming to get it as vertical as possible to ensure that the oil runs free and dosent pool on the skin. Good luck with it. Shayne
