The sauce All rubbed up with Zacks sweet rub Loaded to the hilt. If I had a second shelf Id get over 20kgs in there Ready to foil. They are on keep warm now waiting to be shredded just prior to pick up at 3PM

Pulling the pork, It tasted pretty good and was happy to send it out. Just a word of warning if doing a back yard catering job. BLEECH everything and watch for cross contamination on every tool, knife, tray you use. I Totaly cleaned out the kitchen with bleech last night prior to starting. I also have insurance that covers me for catering on a small scale that is tied in with my day job insurance. I started with 10.9 kg of pork and finished with 6.6 kg cooked prior to saucing. Anyone good at math? What's my loss?

In my head, round terms 43% I think. Looks pretty good Hear what you say about semi-pro catering, never wanted to do it - feel about the same about it as I do about competition actually - great way to lose interest in something you enjoy, via either route Cheers
