That it does, I also see the faults in my old cooking, Crazy experiments gone wrong and where I kind of got it right. Still experiment and still screw up. That's been the fun. Sometimes you win, some you loose. It's great fun to be part of a group that nut something out after trials and share the results . Too true mate, too true. Honey/Soy glazed Pork Knuckles.
These were a real hit. The low n slow produced a fall off the bone delicate meat.

Heres another.
I remember when I qued these, I was like tip toeing around the joint, like, hush hush as to what the meat actually was.
After they were eaten, there were no complaints.
Low n Slow Goat Ribs
And a good change over the oh so standard American cut Pork Rib.

Yep, That is fine rump Cap and perfectly cooked. They are my fave too.
The goat has me wishing I was back in Sydney. You just don't see that up here. Maybe in Brisbane but not here.

I remember back in my early 20's, we used to head out west chasing Pigs and Goats. On the last day, before it was time to head home, we all would go on a fair cull, knocking quite a few heads of Goat over, then, bag the fresh meat and fill eskies to 2/3. On the way back through town, that last 1/3 of space was taken up by a layer of ice, for safe journey home.
Those days we took only back leg and over dice, and left probably the harder to get to better cuts for the Crows and other scavengers.
That said, last month I was out in the central west on two back to back consecutive weekends, Chasing Murray Cod in a major impoundment and I tell ya, have never in my life seen so many Goats.
A couple of trained dogs, or even a handy bowsman would see plenty taken for the table

Weaving around a topic makes it fun, No off topic police here Plenty of interesting things can fling off any given topic. We all know what the heading is and it only takes someone to post something on topic to get it going again. The only area we should keep so called "On topic" would be the actual recipe section for the reasons of 1) respect for the OP's recipe and 2) Make it easy for people wanting to follow the recipe and any related comments about it. I sold all my guns Looking around for a Rem 7600 , probably in 308 and just have the one gun.

Hey, it would be good to have here a sub board, something titled for "the Outdoors" where members could post threads or pictures about, Sport, Camping, Fishing, Hunting or any other interesting outdoor activity that members enjoy.
I think it would be great to have an other area to chill and get away from the BBQ/cooking areas.
Just a thought is all

I do very much endorse that Shayne, on the new board, I think more than enough members get away from the backyard to make that very interesting. Personally - my idea of camping is three star hotels - military cured me of the need Cheers
