ATM, I cant talk highly enough about this Leg Ham.
We have all been hooking into it, as well as samples passed along to family and friends.
All feedback has been 200% positive.
Everything has worked for me on this.....
The pickling spice, how I pumped it, the cure time, smoking methods and mediums used......
Its the best I have ever done so I will be sticking to this recipe
We are having Chicken Parmi tonight using it........ yummy....

Great colour Shayne. Looks like you slice your hams like I do, Down the bone so it's for the most part cut against the grain

Seems to have "seasoned" up the inside of your 2nd Gen smoker pretty well too I'm having a quiet plan to do some myself, it starts with getting a proper smoker rig again Cheers

Right, we have gotton through one leg so tonight, I am going to simmer the bone and Knuckle in a Chicken stock plus extras to create a Ham and Barley Soup.
Bloody cold here in Sydney today so this should go down well.
Got some fresh Panini Di Casa bread rolls to go with it as well.

Delights of being self-employed and a new venture Shayne, not a good year for IT at all That means just at the moment SWMBO would chuck a hissy if I even hinted at some extra food "toy" cheap as putting a smoking rig together would be. All is not lost though, a mate is thinking to get into it and share in the rewards if I assist Cheers

That soup I mentioned that I did last night turned out grand.
Normally, I just buy a 400-500gr portion from the supermarket and add that when preparing this family favourite but......
....using real home made ham (and bones) elevates this dish to a whole new dimension.
Tasty, hearty and a classic on cold evenings
